NEARLY everyone loves brownies – if you don’t, what’s wrong with you? This week, though, we have an alternative for you.
Blondies are usually made with chocolate chips, but without cocoa. These have added banana – so that means we can pretend they’re very good for us!
If you prefer a “gooey” blondie, don’t overmix once you’ve added the flour.

You’ll need:
150g salted butter
200g Everyday Essentials white chocolate
200g caster sugar
3 eggs
200g self-raising flour
2 bananas
100g milk chocolate
Method
Preheat the oven to 180°C/160C fan/gas mark 4/350F.
Grease a 25cm square tin.
Melt the butter and white chocolate together in a bowl over a pan of simmering water.
Stir in the sugar and add the eggs one at a time.
Chop the bananas up into 1cm thick half-moons and break the chocolate up into small chunks – it’s your choice on size.
Add the flour and mix to a batter, then stir in the bananas and milk chocolate.
Pour into the greased tin and bake in the oven for 20-22 minutes, or 22-25 minutes if you want a more “cakey” blondie.
