This delicious recipe for apple crumble is from Aran by Flora Shedden, Hardie Grant, £22.
You’ll need
For the filling:
- 400g apples, grated
- 1 tsp cinnamon
- 100g raisins, soaked in boiling water for 30 minutes
- 225g unsalted butter
- 225g light brown sugar
- 3 eggs
- 225g self-raising flour
- ½ tspn baking powder
For oat crumble:
- 50g plain flour
- 25g rolled oats
- 50g unsalted butter
- 25g caster sugar
- 25g chopped hazlenuts
Method
Weigh out oat crumble ingredients and blitz in food processor, until the mix has a crumble-like consistency. Scrape down and blitz again until you have a chunky mixture. Store in the refrigerator until required.
Preheat oven to 160ºC 320ºF Gas 4. Grease and line a loaf tin.
Toss apple in the cinnamon until well coated. Set aside. Drain raisins.
In a bowl, beat the butter and sugar until light and fluffy. Add eggs, flour and baking powder and combine. Fold in the raisins.
Spoon half the mix into loaf tin and spread flat. Top with the apple. Spoon the remaining mix on top. Finish with oat crumble.
Bake for 30–40 mins or until a skewer comes out of the middle clean. Allow to cool completely before removing from the tin.
