LIKE coffee? Like chocolate even more? Here’s the chance to combine the two with this fabulous mocha cake.
It’s really easy to make and looks impressive – although once it’s ready, it probably won’t last very long!
It makes a perfect Sunday afternoon treat. Go on, you deserve it.

You’ll need
125g Fairtrade dark chocolate
100g butter
3 tbsp milk
4 heaped tsp coffee granules
150g caster sugar
3 eggs
200g self-raising flour
For the icing
1 tbsp milk
1 tbsp coffee granules
150g butter
300g icing sugar
25g Fairtrade dark chocolate
Method
Pre-heat the oven to 180°/160C fan/gas mark 4/350°F and grease two 8” round cake tins.
Melt the chocolate and butter in bowl over a pan of simmering water.
Heat the milk and dissolve the coffee granules in it.
Stir the sugar into the butter and chocolate mixture, then add the milk and coffee.
Beat in the eggs one at a time, then whisk in the flour.
Evenly divide the batter into the tins and bake in the oven for 12 to 14 minutes until a skewer comes out clean.
Cool on a wire rack.
To make the icing, heat the milk and dissolve the coffee granules in it, as before.
Combine the butter, coffee mix and icing sugar together until light and fluffy.
Spread half of the mix over each cooled cake layer and sandwich together.
Grate the chocolate over the top of the cake to create a cappuccino effect.
