LOVE chocolate brownies? Well, who doesn’t?
Here at Bake of the Week, we’re always on the hunt for the ultimate brownie recipe – it’s a tough job but someone’s got to do it. However, this week we’ve decided to go for a twist on the classic brownie. Blondies are similar to brownies, but instead of chocolate they have a vanilla, fudgey or toffee flavour. Thanks to Pyrex for this yummy bake.
You’ll need
250g butter, melted
200g dark brown sugar
100g caster sugar
2 eggs
1½ tsp vanilla extract
250g plain flour
1½ tsp salt
80g toffees, chopped
Method
Preheat the oven to 180C/160C fan/gas mark 4/350F and grease a square or rectangle baking tin – we used a Pyrex 24cm Square Metal Roaster.
Whisk the butter and sugars together until light and smooth.
Stir in the eggs and vanilla.
Fold in the flour and salt until just combined, then lightly add the toffee bits.
Pour the batter into the pan, smoothing the top.
Bake for 35 to 40 minutes until a skewer inserted into the centre comes out clean.
Leave to cool completely before slicing into bars.
