Cheese on toast and Welsh rarebit are classic comfort foods and it’s no surprise that cheese on toast stalls are found at country fairs and festivals.
This recipe takes traditional Welsh rarebit and, with the addition of just a few ingredients, makes it a meal to remember.
Use a strong, mature cheddar for the best results.
You’ll need:
1 sourdough loaf or baguette
200g strong Cheddar cheese, grated
1 tsp Dijon mustard
2 spring onions, chopped
100g Rachel’s natural yogurt (low fat or natural)
2 eggs, separated
1 tbsp plain flour
Method:
Cut the bread into thick slices and grill or toast for 2-3 minutes until golden.
Mix the cheese, mustard, spring onions and yogurt together with the egg yolks.
In a separate bowl, whisk the egg whites until soft peaks form. Gently fold the whites into the cheese mix.
Spread the mixture on the toast and pop back under the grill until bubbling and golden.
Serve straight away with a fresh green salad.
