IF you love cheese, this week’s recipe is a wee pot of heaven! It’s perfect for using up all those leftover bits of cheese you might find lurking in your fridge.
A mix of cheese works well, but cheddar with a bit of a kick to it and Gruyere are particularly good. If you like heat, chilli cheese is also a winner.

You’ll need:
300g cheese, chopped into chunks
100g cream cheese
2 tbsp milk
2 tsp flour
1 tbsp grated Parmesan/cheddar (optional)
½ jar Tracklements Onion Marmalade
Method:
Pre-heat the oven to 160C/325F/gas mark 3.
Mix together the cheeses. Add the cream cheese, milk, flour and pepper to taste. Mix together with a spoon.
Spoon the onion marmalade into an oven-proof dish (12-15cm diameter) and spread out evenly. Top with the cheese mixture.
Bake in the oven for 25 mins or until the cheese starts to bubble. Top with the Parmesan or cheddar if using and put under a medium-high grill until it turns golden.
Serve with hunks of crusty bread or sticks of raw veg if you’re feeling healthy!
Experiment with different cheeses – the onion marmalade provides a good contrast to all that creamy cheesiness!
