THIS is a really quick meal which makes a perfect Sunday brunch and it’s a great alternative to a fry-up.
It’s also a delicious after-work go-to when you need something fast. (We’re all starving the minute we get in from work, right?)
The whole meal is packed with protein, healthy fats and vitamins thanks to the eggs, avocado and tomatoes. Just don’t add too much sour cream. Although we won’t tell anyone if you don’t.
You’ll need:
2 Genius English muffins, halved and toasted
1 avocado
Juice of 1 lime
1 bunch spring onions, finely chopped
1 red chilli
Small bunch coriander
1 tin of black beans or refried beans
2 large tomatoes, skinned
Sour cream
4 large eggs
Method:
Prepare the guacamole. Skin and stone the avocado, roughly mash it and add in lime juice, 2 spring onions and a handful of chopped coriander leaves. Mix and season.
For the salsa, finely chop the skinned tomatoes, place in a bowl and add 2 spring onions, 1 finely chopped red chilli (de-seeded if you don’t want it too spicy) and a little chopped coriander.
Add 1 tbsp olive oil and seasoning. Mix and season.
Warm the beans through in a pan and scramble the eggs.
Meanwhile, split and toast the muffins. Place the halves on each plate, then pile on beans. Top with the scrambled eggs and finish off with guacamole and salsa. Serve with sour cream.
