SOMETIMES you just want a meal that’s super-quick, tasty and nutritious, too – it’s not too much to ask, is it? That’s why we love this recipe for steak fajitas. You can throw the whole lot together in less than 15 minutes and it’s utterly delicious.
The recipe comes from Heartfelt by Pippa Middleton, £19.99. The book features more than 100 heart-healthy recipes and all proceeds go towards funding future research at the British Heart Foundation.
You’ll need:
400g fillet or sirloin steak
2 tsp baharat spice mix
1 yellow and 2 red peppers, deseeded and cut into strips
1 red onion, thinly sliced
A handful of coriander leaves (10g)
To serve:
4 soft wholemeal tortilla wraps
4 tbsp reduced-fat guacamole
Low-fat natural yoghurt
1 little gem lettuce, shredded
Method:
Remove and discard any of the visible fat from the steak and then cut into thin strips.
Place the beef in a bowl with 1 tsp of oil and the spice mix and turn to coat in the spice.
Heat a large, non-stick frying pan. When hot, add the beef, peppers and onions and stir-fry over a high heat for 7-8 minutes, until lightly browned and the peppers and onions have softened.
Stir in the coriander.
Serve the beef and pepper mix wrapped in the warmed, wholemeal tortillas with a little guacamole, low-fat yoghurt and the shredded lettuce.
