You’ll need
- 5 sheets filo pastry
- 1 tbsp jam or onion chutney
- 1 large Camembert cheese
- 1 tsp honey
- Handful of crushed nuts (any type)
- Wedge of red cabbage, shredded
- 1 green apple, cut into matchsticks
- 1 carrot, cut into matchsticks
- A squirt of mayonnaise
- 1 tsp Dijon mustard
- Salt and pepper
Method
Preheat your oven to 160C/gas mark 3 and line a baking tray with greaseproof paper.
Lay the filo sheets out on the lined baking tray, layered one on top of the other. Dollop the jam or chutney into the middle, spread it out a bit, then position your Camembert on top. Wrap the cheese in the filo, then turn the parcel over to show the neater side.
Brush with honey and sprinkle with half the nuts. Bake in the oven for about 20 minutes until golden brown and melted in the middle.
Meanwhile, make the slaw by mixing the cabbage, apple and carrot with the mayo, mustard and remaining crushed nuts.
Season, then serve with the filo-baked Camembert.
