Quick bites: How to make popcorn chicken (serves two)

You’ll need
120g wholemeal bread
½ tsp garlic granules
¼ tsp chilli powder (hot or mild, depending on taste)
½ tsp sea salt
300g chicken breast (skin and fat removed)
1 egg
Low-calorie cooking spray
Method
Preheat oven to 170C (fan 150C/gas mark 3). Line a baking tray with greaseproof paper.
In a food processor, blitz bread into fine crumbs. Place in a shallow dish with garlic granules, chilli powder and salt. Mix well.
Dice chicken into bite-sized pieces. Beat egg in a bowl and add chicken, ensure pieces are coated. Put the chicken into the breadcrumbs, shaking to coat. Place each piece on to baking tray, and repeat until all are coated.
Spray the chicken with low-calorie cooking spray and pop in the oven for 20–25 mins until golden and the chicken pieces are cooked through.
