Mix one tbspn of olive oil with the lemon zest, juice and thyme. Rub into the pork steaks and season.
Heat remaining oil in the pan, add onion. Cook gently until beginning to soften.
Add the paprika, tomato purée, honey, stock and lentils, and simmer gently until hot through. Cover and set aside.
Grill the pork steaks under a medium heat until browned – at least five minutes each side depending on the thickness. Pierce with a knife and check the juices run clear.
Serve with lentils.
