Quick bites: How to make this delicious shrimp and asparagus stir fry

You’ll need
4 tbsp olive oil
1lb/455g raw prawns
1lb/455g asparagus, trimmed and halved
½ tsp chilli flakes
1 tsp garlic, crushed
1 tsp ginger, crushed
1 tbsp low salt soy sauce
2 tbsp lemon juice
Salt, to taste
Method
In large pan, heat two tbsp olive oil over a medium-high heat
Add prawns, season with ½tsp salt, ½tsp chilli flakes
Cook until the prawns are pink. Remove prawns from the pan and set aside.
In the same pan, heat two tbsp olive oil, add asparagus
Add ginger and garlic, then season with ½tsp salt. Stir until asparagus is tender-crisp.
Return prawns to the pan, add soy sauce. Stir until the ingredients are well combined. Just before the dish is ready, add lemon juice and stir once more. Serve while hot.
