Sign Up You’ll need 1 pack Newmarket Pig sausages 1 tbsp olive oil 1 onion, chopped 1 clove garlic, crushed ½ red chilli, deseeded and chopped 1 red pepper, diced 400g can chopped tomatoes 200ml chicken or veg stock 400g can mixed beans 1 tsp smoked paprika 1 tsp oregano 1 tbsp tomato puree Salt and black pepper Method Heat grill to medium and cook sausages according to the pack instructions. Heat the oil in a non-stick pan and add onion. Fry gently for 5 mins until soft, add garlic and chilli, cook for 2 mins. Add red pepper, continue to cook for 2 mins. Add chopped tomatoes, then pour in stock. Continue stirring, tip in other ingredients except sausages. Cook for 20 minutes until thick. Season to taste. Slice the sausages and add to the soup.
