You’ll need 250g Scotty Brand new potatoes 6 slices smoked ham, shredded 8 cherry tomatoes, halved 2 spring onions, sliced ½ red onion, sliced ½ small packet fresh coriander, chopped 1 tsp chipotle paste 4 tbls mayonnaise Juice of ½ lime Method In a bowl, blend the mayonnaise, chipotle paste, and lime juice together. Set aside. Bring the new potatoes to the boil in a large saucepan. Once cooked, drain and set aside to cool. Slice the new potatoes in halves or quarters, depending on the size, and place in a large mixing bowl. Add the mayonnaise mix, shredded smoked ham, cherry tomatoes, spring onions to the cooled potatoes and mix together. Serve as a light starter or side dish.
