Quick Bites: Salmon with broccoli, lime, ginger & chilli

This delicious recipe is from Broccoli by Christopher Trotter, available in Waterstones.
You’ll need
400g broccoli, florets
2 tbsp sesame oil
2 cloves garlic, crushed with salt
1 shallot, peeled and finely chopped
Chunk of ginger grated, about 2cm
2 tbsp nam pla sauce
4 salmon fillets 180g each
3 tbsp cold-pressed rapeseed oil
Zest and juice of 2 limes
Bunch coriander, roughly chopped
2 tsp sunflower seeds, toasted
Method
Preheat oven to 180C, gas mark 6.
Mix sesame oil with garlic, shallot, ginger and nam pla. Combine with broccoli, put in a roasting tin and place salmon fillets on top. Cover in tin foil and bake for 20 minutes.
Make a dressing with the rapeseed oil, lime zest and juice and coriander, check for seasoning.
When the salmon is cooked, sprinkle over the dressing and leave for a few minutes before serving with the toasted sunflower seeds.
