Bake of the week: Salted peanut and white chocolate cookies

You’ll need
150g plain flour
1/2 tsp baking powder
125g unsalted butter, softened
140g peanut butter
110g firmly packed soft brown sugar
55g caster sugar
1 egg
1 tsp natural vanilla extract
80g salted peanuts
140g white chocolate pieces
Vanilla salt or regular sea salt, for sprinkling
Method
Preheat the oven to 180°C (350°F). Line two baking trays with baking paper.
Sift together the flour and baking powder and set aside. Cream the butter, peanut butter and sugars together. Add the egg and vanilla and beat to combine. Fold in the peanuts and white chocolate, then fold in the flour and baking powder.
Roll a walnut-sized piece of dough into a ball and place on a tray. Repeat with the remaining mixture.
Use the tines of a fork to gently press each ball down, then sprinkle with the vanilla salt or regular sea salt.
Bake the cookies for 10–12 minutes or until golden brown. Let them cool on a wire rack, then transfer to an airtight container.
